1/4 Cup Butter room temp.
1 Egg beaten; for glaze
2 1/4 Teaspoons Yeast (use yeast only to speed action)
1 Tablespoon Cardamom crushed
2 Cups Milk up to 1
1/2 Cup Sugar (8oz)
7 Cups Flour seasoned with

1. Scald the milk.

2. Place milk, sugar, and butter in a large mixing bowl.

3. When the milk is lukewarm, add the yeast, the egg, the cardamom, and 4 cups of the flour; beat thoroughly.

4. Gradually add the remaining flour. Knead until smooth and elastic.

5. Place the dough in a greased bowl and brush top with melted butter.

6. Let rise until doubled in bulk (2 to 4 hours).

7. Punch down and knead again. Shape and place in bread pans.

8. Brush with melted butter and let rise until very light (1 or 2 hours).
