Cardamom-oatmeal Wafers

Ingredients:
1 Cup Whole Wheat Pastry Flour 1 Cup Sifted whole wheat pastry flour
1/2 Cup Sugar 1/2 Cup Granulated sugar cane juice or brown sugar
2. Spray 8 by 11 inch or 9 by 12 inch baking dish with cooking spray.
3. Combine all ingredients except butter and chocolate in a food processor.
4. Pulse to mix and pulverize oats. Add butter and process until mixture is crumbly.
5. Sprinkle evenly into pan. With the back of a large spatula or with your fingers, press dough evenly and firmly into pan.
6. Bake until golden, 17-20 minutes. Cut into 1 1/4 inch squares while hot.
7. Cool in pan on rack. To garnish, drizzle melted chocolate over cookies.
