Ingredients:

1 Quart Fresh Orange Juice (6 fl oz)
1/2 Cup Olive Oil or to taste
1 Tablespoon Thyme Leaves dried
1 Tablespoon Allspice ground
5 Pounds Black Beans or cooked black beans (6 to 7 qts)
2 Pounds Onions (2 qts.) chopped
6 Cloves Of Garlic minced (2 tbsp)
6 Ounces Fresh Ginger grated (1/3 cup)

Directions:

1. If using dried beans, pick over for stones, rinse, and soak overnight in water to cover; or bring to a boil, remove from the heat, and soak for 1-2 hours.

2. After the beans have soaked, drain and cook until tender in 2-3 gallons of water for 30-45 minutes.
