Carolina Dream Cake

Ingredients:
1 Cup Butter 1 Cup Butter or margarine, softened (1 stick)
2 Cups Sugar 2 Cups Sugar confectioner'
1 Teaspoon Extract Of Vanilla 1 Teaspoon Extract Of Vanilla or orange flower water; optional
1. Cream butter; gradually add sugar, beating well at medium speed of an electric mixer.
2. Add vanilla, mixing well. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.
3. Mix well after each addition. Beat egg whites (at room temperature) until stiff peaks form; fold whites into batter.
4. Grease three 9-inch round cake pans, and line with wax paper; grease wax paper.
5. Pour batter into prepared pans; bake at 350 for 18 to 20 minutes or until a wooden pick inserted in center comes out clean.
6. Cool in pans 10 minutes; remove from pans, and let cool completely on wire racks.
7. Spread Carolina Dream Frosting between layers and on top and sides of cake.
8. Yield: one 3-layer cake. Di Note: A very elegant cake that I use around the holidays, last used at a dinner party for 12.
