Ingredients:

1 Teaspoon Cinnamon
1 Teaspoon Baking Soda
1 1/2 Cups Flour
1/4 Cup Mixed Nuts Choppped
1/2 Teaspoon Salt coarse
2 Eggs beaten
1 Cup Carrot Shredded
1/2 Cup Raisin optional
3/4 Cup Vegetable Oil
1 Cup Sugar

Directions:

1. Hear oven to 350 F Grease (not oil) bottom only of 9x5 or 8x4 loaf pan.

2. In large bowl, blend first 4 ingredients. Add flour, baking soda, cinnamon, and salt .

3. Beat 1 minute at medium speed. Stir in nuts and raisins.

4. Pour into prepared pan. Bake 50 to 60 minutes until a toothpick inserted comes out clean.

5. Remove from pan: cool completely. If glaze is desired, combine 1/2 cup powdered sugar, 1 teaspoon grated lemon peel and 1 tablespoon lemon juice.
