Ingredients:

1 Egg lightly beaten
1/2 Cup Raisin dark, seedless (optional)
1/2 Cup Sugar
1 3/4 Cups All-Purpose Flour
1/2 Teaspoon Ground Cinnamon
1/4 Teaspoon Ground Cloves
1 Cup Carrot Shredded
1 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1 Teaspoon Extract Of Vanilla
3/4 Cup Brown Sugar packed
1/4 Teaspoon Salt coarse
3/4 Cup Butter or margarine
2 Cups Oats

Directions:

1. Preheat oven to 375 degrees.

2. Beat the butter and sugars until light and fluffy.

3. Add the egg and vanilla extract; beat. Sift in the flour, baking powder, baking soda, salt, cloves and cinnamon; beat until combined.

4. Stir in the oats, raisins and carrots. Drop by tablespoonfuls onto ungreased cookie sheets.

5. Bake for 10 to 12 minutes, or until the edges are golden.

6. Cool on wire racks. Makes 2 1/2 dozen large cookies or 48 regular size cookies.
