1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt black pepper
1/2 Teaspoon Baking Powder double-acting
2 Eggs Yolks
1 Teaspoon Vanilla or almond flavoring
1/2 Cup Butter or margarine
1 1/2 Cups Light Brown Sugar packed
1/2 Cup Walnut finely chopped
1 1/2 Cups Carrots finely grated
1/2 Cup Raisin chopped
1 1/2 Cups Flour unsifted

1. Preheat oven to 350 F (moderate).

2. Grease a 9- by 13-inch baking pan. Mix sugar and fat.

3. Add eggs and vanilla; beat. Stir in dry ingredients.

4. Add raisins and carrots; stir. Spread mixture into baking pan; sprinkle with walnuts.

5. Bake about 40 minutes or until a toothpick inserted in center comes out clean.
