Directions:
1. Parboil sliced carrots until al dente, about 10 minutes.2. Drain and rinse under cold water to stop cooking.3. Can be prepared 2 hours ahead of time. Heat butter over medium heat until melted.4. Add carrots, sugar and heat to caramelize sugar.5. Add Amaretto and cook to reduce sauce to a glaze.6. Season to taste with salt and pepper. Serve immediately.
