Carrots with Tarragon

Ingredients:

1/2 Teaspoon Lemon Juice to taste
1 Tablespoon Butter Melted And Kept Hot
1 Pound Carrot finely grated
1 Teaspoon Fresh Tarragon chopped
1/2 Teaspoon Fresh Ginger grated

Directions:

1. Peel and trim carrots.

2. Cut into diagonal slices about 2 inches long.

3. Steam carrots until just tender, about 10-11 minutes.

4. In a large bowl, combine butter, ginger, lemon juice and tarragon.

5. Add carrots and toss to coat. Serve immediately.

6. Serving Ideas : Serve these with baked chicken and fresh melon.

7. * Fresh coriander may be substituted for the tarragon if you prefer.
