Directions:
1. Dust a sheet of waxed paper with paprika.2. In a food processor, finely grate the cheddar cheese.3. Grind the cashews. Process the cream cheese until soft.4. In a large bowl, mix the cheese, cashews, and cream cheese together, and stir in the garlic.5. Shape the mixture into a 1 1/2 inch roll. Roll on the waxed paper until thoroughly coated with the paprika.6. Wrap the rolls in fresh waxed paper and refrigerate.7. Thinly slice to serve on round crackers. NOTE: These rolls may be frozen, or they keep well in the refrigerator.8. Makes one roll. Double the recipe as needed to make two rolls.9. One roll will serve between 8 and 10 people.
