Cashew Dipping Sauce

Ingredients:
2 Tablespoons Sugar
3/4 Cup Water
1 Cup Cashew Coarsely Broken
1 Tablespoon Peanut Butter (about 3/4 cup)
1 Tablespoon Rice Wine or cider vinegar
1 Tablespoon Fresh Lime Juice (about 2 limes)
2 Tablespoons Ginger fresh, minced
3 Tablespoons Soy Sauce or tamari, reduced-sodium kind
1. Toast the cashews on a cookie sheet in a 400F oven until golden.
2. Chop cashews. In a small sauce pan, combine sugar and water and bring to a boil over high heat stirring.
3. Remove from heat and add remaining ingredients.
4. NOTES : This sauce is great for dipping skewered grilled shrimp.
