1 Unit Pound Cake loaf 9&
2 Cups Ricotta Cheese part skim milk
4 Ounces Chocolate semi-sweet
1 Ounce Orange Liqueur or Orange
1 1/2 Cups Raspberry Jam (I preferred 3/4 cup)
2 Cups Chocolate Frosting OR
2 Cups Whipped Cream sweetened
1 Unit Whole Almond

1. Chill pound cake for 1 hour.

2. Trim edges and uneven pieces so cake is level on all sides and top.

3. Slice cake horizontally into 1/2" slices and place on serving platter.

4. Force cheese through a sieve into a bowl and beat until smooth.

5. Chop chocolate into fine bits in a blender. Mix chocolate bits with liqueur and jam.

6. Spread a portion of cheese on the bottom layer; then spread that with a portion of jam mixture.

7. Repeat until all layers are used, leaving top plain.

8. Press down gently. Use a spatula to even all sides.

9. Cover with plastic wrap and refrigerate 24 hours.

10. Before serving, frost with chocolate frosting or whipped cream and garnish with almonds.
