Ingredients:

3 Tablespoons Dry Sherry 3 Tablespoons Dry sherry plus 1 teaspoon
1 Tablespoon Soy Sauce 1 Tablespoon Soy sauce plus 1 teaspoon
2 Tablespoons Scallions 2 Tablespoons Scallions chopped
1 Unit Garlic 1 Unit Cl Garlic minced
1/4 Teaspoon Ground Ginger 1/4 Teaspoon Ground ginger (up to 3/4)
4 Unit Catfish 4 Unit Catfish fillets cut in 2-in
1 Unit Red Pepper 1 Unit Red pepper cut julienne
2 Ounces Ham 2 Ounces Ham thinly sliced*
8 Unit Lemons 8 Unit Lemon slices (optional)

Directions:

1. Combine first 6 ingredients in a bowl.

2. Cut 4 (12 x 12 inch) square pieces of parchment paper.

3. Fold each to form a triangle; open. Divide catfish among four papers.

4. Top with red peppers, ham and 2 slices of lemon per packet.

5. Spoon sauce over mixture. Close each packet to form a triangle; crimp edges to seal tightly.

6. Arrange 2 packets on a microwave-safe plate.

7. Microwave on High 6 minutes. Let stand 1 minute.

8. Repeat with remaining 2 packets. Arrange packets on serving plates; open carefully at table.

9. Serve immediately. Serves 4. In a conventional oven: preheat oven to 450 F Place crimped packets on baking sheet; bake for 10-12 minutes.

10. Light cuisine - 300 or less calories per serving.
