Cheddar Cheese Straws

Ingredients:

6 Tablespoons Butter small lump
1 Cup Flour whole wheat
1 Cup Cheddar Cheese grated
1 Unit Egg yolk (optional)
2 Tablespoons Water Heated To 105F

Directions:

1. Using a pastry blender, food processor or two knives, cut butter into flour until very finely crumbled.

2. Stir in cheese. In a small bowl, mix egg yolk and water.

3. Stir into flour mixture. Knead dough until smooth.

4. Wrap dough in plastic wrap. Chill at least one hour before rolling out.

5. (At this point dough can be frozen for later use).

6. Heat oven to 375 deg f. Roll Chilled dough out to 1/4 inch thickness.

7. Cut into 1/4\" x 4\" strips. Place strips on ungreased baking sheet.

8. Bake 12 to 15 minutes or until lightly browned.

9. Transfer to serving platter and serve while hot.
