Ingredients:

1/2 Cup Butter
1 Teaspoon Vanilla
1/2 Teaspoon Baking Soda
1 1/2 Cups Unbleached Flour
1/2 Teaspoon Salt coarse
1 1/2 Cups Low Fat Cheddar Cheese Sharp, Shredded
1 Egg Lg
1/4 Cup Brown Sugar Firmly Packed
1/4 Cup Sugar Granulated
8 1/4 Ounces Pineapples Crushed
1/4 Cup Maraschino Cherry Chopped

Directions:

1. Cream the butter and sugars together until light and fluffy then stir in the egg and vanilla.

2. Add the combined dry ingredients and blend well.

3. Stir in the cheese, pineapple, and cherries.

4. Drop the dough by rounded teaspoonfuls onto an ungreased cookie sheet.

5. Bake at 375 degrees F. for 15 minutes.
