1 Package Manicotti 1 Package Manicotti 8-oz
1 Unit Ricotta Cheese 1 Unit Container Ricotta cheese 15 oz
2 Cups Mozzarella Cheese 2 Cups Mozzarella cheese shredded
1/2 Can Parmesan Cheese 1/2 Can Parmesan cheese grated
1 Unit Egg 1 Unit Egg Yolks
1 Tablespoon Parsley 1 Tablespoon Parsley or oregano; chopped
1/4 Teaspoon Salt 1/4 Teaspoon Salt and pepper to taste
1/4 Teaspoon Pepper 1/4 Teaspoon Pepper hot red
1/8 Teaspoon Nutmeg 1/8 Teaspoon Nutmeg ground
2 Cups Spaghetti Sauce 2 Cups Spaghetti sauce canned *
1/3 Cup Walnut 1/3 Cup Walnuts optional

1. Prepare pasta as directed on package; drain.

2. Rinse with cold water, drain and arrange in single layer to fill.

3. Meanwhile, mix ricotta cheese, 1 1/2 cups of the mozzarella cheese, 1/4 cup of the Parmesan cheese, the egg, parsley, salt, pepper and nutmeg.

4. Spoon mixture into manicotti shells, using at least 1/3 cup per shell.

5. Place filled manicotti shells in a single layer in greased 13 x 9 inch baking pan.

6. Pour spaghetti sauce over manicotti shells. Sprinkle with remaining 1/2 cup mozzarella cheese and 1/4 cup Parmesan cheese.

7. Bake at 350 deg F for 35 minutes or until hot.
