1/4 Pound Butter (or marg.) melted
3 Eggs beaten; for glaze
1 Cup Grits preferably stone ground
4 Cups Spaghetti water
2 Cloves Of Garlic pressed
1/2 Pound Low Fat Cheddar Cheese grated

1. Cook grits in water seasoned with garlic and salt according to package.

2. Remove from heat. Add butter and stir to dissolve.

3. Add Cheddar cheese, holding back a good handful to garnish.

4. Now add eggs and mix completely. Salt and pepper to taste.

5. Place in a buttered 2-quart baking pan. Sprinkle remaining Cheddar on top.

6. Sprinkle top with a generous amount of Parmesan, dust with paprika, garnish with jalapenos and bake, uncovered, in a 300 degree oven for 45 minutes.
