Ingredients:

1 Cup Cheddar Cheese 1 Cup Grated cheddar cheese
1 Can Mushroom Soup 1 Can (10 oz) mushroom soup
1/4 Cup Milk 1/4 Cup Milk (evaporated is best)
2 Cups Rice 2 Cups Cooked rice
1/2 Cup Pepper 1/2 Cup Chopped green pepper
2 Cans Salmon 2 Cans (8 oz) Pacific salmon
1/2 Cup Corn 1/2 Cup Cornflake crumbs (or matza meal)
2 Tablespoons Butter 2 Tablespoons Melted butter

Directions:

1. In a saucepan gently heat 3/4 cup cheese with soup and milk, stirring constantly, until cheese melts.

2. Combine rice and green pepper. In a greased 2-qt casserole, alternate layers of rice and flaked salmon, beginning with rice.

3. Pour sauce over all. Ring casserole with crumbs mixed with melted butter.

4. Place remaining cheese inside crumb ring. Bake at 350 F for 30-35 minutes.
