6 Unit Eggs 6 Unit Large Eggs reserve yolk
2 Packages Frozen Spinach 2 Packages Frozen Spinach Thaw and drain
1 Pound Mozzarella Cheese 1 Pound Mozzarella cheese Shredded
Cup Ricotta Cheese Cup Ricotta Cheese
1/2 Teaspoon Salt 1/2 Teaspoon Salt and pepper to taste
Dash Pepper Dash Pepper to taste
Dash Garlic Powder Dash Garlic Powder to taste
1 Unit Pie Crust 1 Unit Pie crust (9 inch)
3 Teaspoons Water 3 Teaspoons Water reserved from cooking

1. Saute sausage slices.

2. Combine eggs with sausage, spinach, mozzarella, ricotta, salt, pepper and garlic powder.

3. Line deep pie pan with crust. Add filling. Put rest of crust on top, trim edges, and fold under.

4. Slit top to vent. Combine reserved yolk with water.

5. Brush top of pie. Bake in preheated 375 degree oven 1-1/4 hours.

6. Let stand 10 minutes. Serve hot or cold. NOTES : This is one of the cholesterol laden, artery clogging, heart stopping recipes I'm famous for.
