2 Packages Broccoli 2 Packages broccoli (10 oz) frozen chopped thawed
3 Cups Cheddar Cheese 3 Cups Shredded cheddar cheese divided
Cup Onion Cup Chopped onion
3 Unit Eggs 3 Unit Eggs separated, plus 2 egg yolks
1 1/3 Cups Milk 1 1/3 Cups Milk (evaporated is best)
3/4 Cup Baking Mix 3/4 Cup Biscuit/baking mix
1/2 Teaspoon Salt 1/2 Teaspoon Salt and pepper to taste
1/4 Teaspoon Pepper 1/4 Teaspoon Pepper hot red

1. In a large bowl, combine broccoli, 2 cups cheese and onion.

2. In another bowl, combine eggs, milk, biscuit mix, salt and pepper; mix well.

3. Pour over broccoli mixture; toss gently. Pour into two greased 9-inch pie plates.

4. Bake at 400 F for 25-30 minutes or until a knife inserted in center comes out clean.

5. Sprinkle with remaining cheese; return to the oven for 1--2 minutes or until melted.
