1/2 Pound Fresh Spinach trimmed
1 Cup Fresh Mushrooms
1/3 Cup Green Onion
1 Tablespoon Lemon Juice to taste (2 to 4)
1 Tablespoon Butter or margarine (up to 3)
1 Cup Monterey Jack Cheese
2 Ounces Feta Cheese crumbled
2 Tablespoons Parmesan Cheese
3 Unit Potatoes baked

1. In 2-quart microwave-safe casserole combine spinach, mushrooms, green onions, lemon juice and butter.

2. Cover loosely with plastic wrap; cook on High 2 to 3 minutes or until spinach is limp.

3. Stir in cheeses. Cut potatoes in half lengthwise; fluff with fork.

4. Arrange on microwave-safe platter. Top with spinach-cheese topping.

5. Cook on High 30 to 45 seconds or until heated through.
