Cherry Honey Relish

Serve with roast pork, turkey, chicken or ham. Adjust brown sugar to taste of cherries are very tart, or not in syrup. This recipe is very easy to make, ant takes less time for preparation.


20 Ounces Cherries
1/2 Cup Raisin soaked for an hour in:
1/2 Cup Honey (45 ml)
1/4 Cup Cider Vinegar (5% Acidity)
1/4 Cup Brown Sugar Firmly Packed
1/2 Teaspoon Ground Cinnamon
1/8 Teaspoon Ground Cloves
1/2 Cup Pecan Chopped Medium Coarse
1 Tablespoon Cornstarch Dissolved In
1 Tablespoon Water

1. Use this with light meats such as duck, pork, or chicken Yield: 2 1/2 cups of sauce.

2. In a 2-quart saucepan, combine all the ingredients through the clove listing.

3. Cook slowly, uncovered, for 30 minutes. Stir in the pecans.

4. Combine the cornstarch and cold water, blending well, and gradually stir into the cherry mixture.

5. Cook, stirring constantly, until the mixture thickens.
