Cherry Nut Cake - Favorite

A cake made with the goodness of real fruit and nuts. With the pink frosting it will surely be an eye catcher. Recipe is fairly simple.


2 1/4 Cups Flour whole wheat
1 1/3 Cups Sugar
3 Teaspoons Baking Powder plus
1 Teaspoon Salt and pepper to taste
1/2 Cup Vegetable Shortening solid
1/4 Cup Maraschino Cherry
16 Unit Maraschino Cherries (10 to 12)
1/2 Cup Milk or part cream
4 Eggs ;
1/2 Cup Walnut

1. Preheat oven to 350 F Sift together the flour, sugar, baking powder, and salt.

2. Add the vegetable shortening, cherry juice, cherries and the milk and beat for 2 minutes.

3. Add 1/2-2/3 cups(4 large) unbeaten egg whites and beat 2 minutes more.

4. Then fold in1/2 c. of chopped nuts. Pour into two greased and floured round cake layer pans and bake for 30-35 minutes.

5. Frost with pink Seven Minute Frosting (it's recipe is in this file).

6. NOTES : MUST use 7-Minute Frosting on this cake and color it pink.
