Ingredients:

2 Cups Flour 2 Cups Flour whole wheat
Cup Sugar Cup Sugar confectioner'
3/4 Teaspoon Baking Soda 3/4 Teaspoon Baking soda level - dissol ved in milk
1/4 Teaspoon Salt 1/4 Teaspoon Salt to 1 ts
1/3 Cup Dark Corn Syrup 1/3 Cup Dark corn syrup
3 Tablespoons Vegetable Oil 3 Tablespoons Vegetable oil as needed
1 Teaspoon Vanilla 1 Teaspoon Vanilla grated lemon zest or orange zest
1 Teaspoon Coconut 1 Teaspoon Coconut extract
2 Unit Eggs 2 Unit Egg whites ;
1/3 Cup Coconut 1/3 Cup Coconut toasted if desired
1 Unit Vegetable Cooking Spray 1 Unit Vegetable cooking spray ;
2 Tablespoons Coconut 2 Tablespoons Coconut toasted

Directions:

1. Preheata oven to 350F Combine flour, sugar, soda and salat in a large bowl and blend well.

2. Combine syrup, oil, vanilla, coconut extract, and egg whites; blend well.

3. Stir into dryingrediets, just until combined.

4. Add 1/3 cup coconut. Drop by level tablespoons onto sprayed baking sheets.

5. Sprinkle with toasted coconut. Bake 8 minutes; let cool on pan 1 minute before removing to wire racks to cool completely.
