Ingredients:

2 Chicken Breasts whole
2 Tablespoons Butter (softened)
1/2 Teaspoon Garlic fresh
1/4 Teaspoon Salt ; (optional)
1/4 Teaspoon Pepper coarsely ground
2 Tablespoons Parmesan Cheese freshly grated
2 Tablespoons Vegetable Oil 45 Ml
1 Tablespoon Vinegar cider
1 Tablespoon Lemon Juice up to 4
2 Tablespoons Sour Cream light or dairy
1 Tablespoon Dijon Mustard to taste
4 Cups Romaine Lettuce torn
1 Tomato ripe

Directions:

1. In a 10 inch skillet melt butter until sizzling.

2. Add chicken, garlic, salt and 1/4 teaspoon pepper.

3. Cook over medium heat, turning once, until chicken is browned and fork tender ( 7 to 10 minutes ).

4. Meanwhile, in a small bowl stir together all dressing ingredients.

5. In a large bowl place lettuce. Pour dressing over lettuce; toss to coat.

6. On a platter or individual salad plates place lettuce.

7. Place tomato slices and chicken on lettuce. Arrange garlic rounds on salad.
