Ingredients:

3 Unit Chicken Breasts boned, skinned, flattened
6 Tablespoons Butter melted
3 Tablespoons Dijon Mustard or any other
1 1/2 Cups Pecans plus pecan
1/4 Cup Butter (1/4 stick) cut into 6 pieces
3/4 Cup Chicken Broth **
Cup Sour Cream (light or yogurt)
1 Package Stuffing Mix (stove top, pepperidge farm, or betty crocker)

Directions:

1. Prepare stuffing mix.

2. Divide among chicken breast, then roll up and fasten with a toothpick.

3. Season with garlic powder, salt and pepper. Blend together melted butter and mustard.

4. Coat chicken in mixture and roll in pecans. In large skillet brown chicken in butter all over.

5. Add chicken broth and simmer until chicken is tender.

6. Remove chicken to platter, blend sour cream into skillet drippings.

7. Heat and spoon over chicken. Makes 6 servings.
