In a bowl, toss chicken with sesame oil, soy sauce, garlic, and 1/4 teaspoon of the red-pepper flakes. Season with salt and pepper. Thread each chicken strip lengthwise onto a skewer.Heat grill pan over high. Working in batches, brush pan with oil, and cook chicken until opaque throughout, 1 to 2 minutes per side. Serve chicken skewers with dipping sauce.

Ingredients:

2 Unit Cloves Of Garlic finely chopped
1 Unit Fresh Ginger a 1&
2 Tablespoons Green Onions minced
2 Teaspoons Lemons finely grated
2 Tablespoons Soy Sauce about 5 shakes
2 Tablespoons Dry Sherry plus 1 teaspoon
1 Tablespoon Sesame Oil see note
1/2 Teaspoon White Pepper to taste
4 Unit Chicken Breasts skinned &
1 Unit Peanut Oil (2-4 T)
1 Unit Pepper (to taste)

Directions:

1. Combine garlic, ginger, green onions and zest in food processor and puree.

2. Add soy sauce, sherry, sesame oil and pepper.

3. Process until blended. Cut chicken into 1" cubes.

4. Place in bowl, add marinade and toss to coat evenly.

5. Cover and marinate at room temperature for 30 minutes.

6. Soak six bamboo skewers in water for 30 minutes.

7. Preheat grill or broiler. Thread chicken cubes onto soaked skewers.

8. Brush with peanut oil and sprinkle with salt and pepper.

9. Place skewers on an oiled grill and cook 2-3 minutes on each side.
