With just a little time invested, you can have a wonderful chicken dish. This spicy chicken and cheese creation is cooked to perfection, and is a hit with everybody.


1/2 cup Cornmeal yellow
1/2 teaspoon Salt
1 tablespoon Instant Onion minced
20 oz Kidney Beans drained can
1 1/2 cups Chicken Breasts Chicken diced cooked
2 cups Water
1 cup Sharp Cheddar Cheese shreded
16 oz Beans Chili without can
4 oz Pimentos drained/diced can

1. Mix cornmeal, water and salt in a saucepan; bring to a boil.

2. Simmer, stirring constantly, until mixture becomes very thick.

3. Remove from heat; stir in cheese and onion. Spread mixture evenly into bottom and sides of a greased 2-quart baking casserole.

4. Mix together chili, kidney beans, pimientos and chicken; pour mixture into lined bowl.

5. Cover; bake in preheated 350 F oven 35 to 40 minutes, or until bubbly.
