Chicken and Potatoes Oregano

This easy recipe can also be made using leftover chicken, turkey, or even ham.

Ingredients:

5 Potatoes Pared &
1/2 Cup Butter small lump
1 Onion chopped
4 Unit Chicken Breasts with skin and bones
1 1/2 Teaspoons Salt to 1 ts
1/8 Teaspoon Pepper black
3/4 Teaspoon Oregano dried whole
1/4 Teaspoon Italian Seasoning
1 Tablespoon Parsley

Directions:

1. Peel potatos and cut into 1" cubes.

2. Set aside. Melt butter in heavy skillet, such as cast iron.

3. Add onions and saute till golden brown. Add chicken breasts and potatos.

4. Sprinkle with salt and pepper. Cover and cook on medium heat 20 minutes, turning often.

5. Sprinkle with oregano and italian seasonings.

6. Continue to cook, turning often, for another 20 minutes.

7. Sprinkle with parsley and continue to cook until chicken is done to your satisfaction.
