Ingredients:

6 Tablespoons Unsalted Butter melted
1 Can Corn *
1/2 Cup Sour Cream optional
2 Eggs in shell (up to 8)
1 Cup Yellow Cornmeal preferably
1 Teaspoon Salt optional
1 Tablespoon Baking Powder plus
1/2 Cup Monterey Jack Cheese shredded
2 Scallions washed and sliced into thin rings
1/2 Teaspoon Flakes Red Pepper to taste

Directions:

1. Preheat oven to 375.

2. Beat together melted butter, corn, sour cream and eggs together in mixing bowl.

3. Mix together cornmeal, salt and baking powder.

4. Stir dry ingredients into egg mixture. Blend well.

5. Stir in cheese, scallions and red pepper flakes.

6. Pour into a buttered baking pan and bake for 20 minutes until golden brown.
