Chilled Zabaglione Cream

Ingredients:

6 Tablespoons Sugar 6 Tablespoons Sugar
1 Teaspoon Unflavored Gelatin 1 Teaspoon Unflavored gelatin (1 tb.)
1/2 Cup Marsala Wine 1/2 Cup Marsala wine warmed
3 Unit Eggs 3 Unit Eggs separated
3 Unit Eggs 3 Unit Egg yolks (up to 5)
1 Tablespoon Brandy 1 Tablespoon Brandy or sherry
1 Tablespoon Vanilla 1 Tablespoon Vanilla almond or lemon flav
1 Cup Heavy Whipping Cream 1 Cup Heavy Whipping Cream (up to 3)
1/4 Teaspoon Salt 1/4 Teaspoon Salt and pepper to taste
1/4 Teaspoon Cream Of Tartar 1/4 Teaspoon Cream of tartar add
1/2 Ounce Semisweet Chocolate 1/2 Ounce Semisweet chocolate shaved into curls

Directions:

1. Mix 4 tablespoons sugar and the gelatin in a measuring cup.

2. Stir in the wine. Set aside. Place all 6 egg yolks in the top of a double boiler and beat until thick and light in color.

3. Stir in the gelatin mixture. Place over hot water and cook, stirring constantly, until thickened.

4. Remove from heat. Stir in the brandy and vanilla.

5. Chill until cool, but` not set. Stir occasionally.

6. Whip the cream until stiff. Fold into the egg yolk mixture.

7. Beat the egg whites until foamy. Add the salt and cream of tartar.

8. Beat until stiff. Beat in 2 tablespoons sugar.

9. Fold the whites into the cream/egg yolk mixture.

10. Spoon into 6 to 8 tall parfait glasses or dessert dishes.

11. Chill 1 hour or longer. Garnish with chocolate curls.

12. NOTE: The remaining 2 servings can be covered, refrigerated, and served within a day or two.
