Chocolate Cappuccino Mousse

Ingredients:

6 Ounces Sugar
3 Vanilla Beans
1 Teaspoon Cinnamon
14 Ounces Bittersweet Chocolate melted
24 Ounces Whipped Cream
3 Ounces Coffee Liqueur Tiramisu
1 Tablespoon Coffee extract

Directions:

**Whipped cream with 1 oz. liqueur.
1. Add more to taste but not too much or cream won't hold.

2. Whip yolks until pale.

3. Heat sugar with 4 ounces water until 248 degrees F stirring constantly.

4. With mixer on medium add sugar to egg yolks in a thin stream.

5. Continue to whip until fluffy.

6. Cool.

7. Place chocolate in a mixer bowl and on medium rapidly add 2/3 of the whipped cream.

8. Add this to egg yolks then add remaining cream.

9. Sprinkle with Tiramisu liqueur, cinnamon and coffee extract.

10. Beat on high until well combined.

Serves 6-8.
