1/3 Cup Sugar 1/3 Cup Sugar (up to 6)
1 Unit Egg 1 Unit Egg separated
1 Teaspoon Vanilla 1 Teaspoon Vanilla grated lemon zest or orange zest
1 Teaspoon Peppermint Extract 1 Teaspoon Peppermint Extract
1 1/2 Cups Flour 1 1/2 Cups Flour bleached, sifted
1/4 Cup Unsweetened Cocoa 1/4 Cup Unsweetened Cocoa ;
1 Teaspoon Baking Soda 1 Teaspoon Baking Soda or less to taste
1 Cup Chocolate Chips 1 Cup Chocolate Chips Semisweet

Directions:

1. Preheat oven to 350 and grease cookie sheets.

2. Cream butter and sugars. Beat in egg, vanilla, and peppermint extracts.

3. Add dry ingredients gradually along with the chocolate chips.

4. Drop by rounded teaspoons onto greased cookie sheet and bake 10 minutes.
