Mouth watering cookies filled with delicious chocolate chunks and the crackling bite of pecans, these cookies are the perfect accompaniment of nice cup of coffee or just an evening snack.
Ingredients:
1 Unit Butter softened
1/2 Cup Sugar
1/2 Cup Dark Brown Sugar packed
1 Unit Egg separated
1 Teaspoon Extract Of Vanilla or orange flower water; optional
1 Cup Flour
1/2 Teaspoon Salt (I used reduced sodium)
1/2 Teaspoon Baking Soda (dissolved in a little warm water)
1/2 Cup Pecan chopped
6 Ounces Bitters or semisweet chocolate; chopped coarsely
2. Place the butter in the bowl of an electric mixer and beat until creamy.
3. Add the sugars and beat until light and fluffy.
4. Add the egg and vanilla and beat well to combine.
5. Sift together the dry ingredients and add to the batter, mixing well.
6. Remove bowl from mixer (be sure to scrape the beater) and stir in the nuts and chocolate chunks by hand.
7. Drop by teaspoons onto greased cookie sheets and bake 8 to 10 minutes until lightly browned.
8. Cool 5 minutes on sheets then remove cookies with a spatula to racks to cool.
