Chocolate-Covered Almonds

Ingredients:

28 Ounces Semisweet Chocolate broken small chunks
2 Cups Sugar (for decoration)
1 Cup Water or orange juice
3 Cups Almonds (blanched) finely ground
1 Cup Confectionery Sugar (up to 1.5 lbs may be needed)

Directions:

1. Mix almonds, sugar, water in a heavy saucepan over medium high heat for about 5 minutes until mixture has a sandy texture and coats the almonds.

2. (While stirring, push mixture up the sides to make sugar crystallize).

3. Spread almonds on a baking sheet covered with parchment paper and freeze.

4. Warm chocolate until just melted (about 88 F).

5. Put almonds into a bowl and pour 1/2 of the chocolate in and mix vigorously to keep almonds from clumping together.

6. Add the rest of the chocolate and continue to stir until almonds are well coated.
