Chocolate Poundcake 2

Ingredients:

2 3/4 Cups Flour 2 3/4 Cups Flour bleached, sifted
3/4 Teaspoon Cream Of Tartar 3/4 Teaspoon Cream of tartar (meringue)
1/2 Teaspoon Baking Soda 1/2 Teaspoon Baking soda level - dissol ved in milk
1 1/2 Teaspoons Salt 1 1/2 Teaspoons Salt and pepper to taste
1 3/4 Cups Sugar 1 3/4 Cups Sugar (up to 6)
1 Cup Margarine 1 Cup Margarine softened
Cup Milk Cup Milk (evaporated is best)
1 Teaspoon Extract Of Vanilla 1 Teaspoon Extract Of Vanilla or orange flower water; optional
3 Eggs 3 Eggs separated, plus 2 egg yolks
2 Unit Unsweetened Chocolate 2 Unit Unsweetened chocolate squar
1 Unit Sugar 1 Unit Powdered sugar (opt)

Directions:

1. In large bowl, combine flour, cream of tartar, baking soda, salt and sugar.

2. Add margarine, milk, vanilla. Beat on medium speed, for about 2 minutes, to blend ingredients.

3. Add eggs and melted chocolate, beating another 2-3 minutes to blend.

4. Turn into greased 3 1/2" deep tube pan and bake at 350~ for 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean.

5. Remove from oven and cool in pan for 15 minutes, then invert pan and carefully remove cake.

6. Serve warm or cool, dusted with powdered sugar if desired.
