2 Tablespoons Honey or barley malt
1/4 Cup Fresh Cilantro Chopped
2 Green Onions Thinly Sliced
4 Lettuce (up to 8)
1/2 Cup Peanuts Chopped
2 Beets Cooked
3 Cups Yams Peeled and Cubed
4 Oranges Peeled

4. Combine beets, jicama, oranges and fresh cilantro in a bowl and allow to chill until ready to serve.

5. Blend dressing ingredients in a lidded jar or mixing bowl.

6. Just before serving, pour dressing over salad, toss to distribute dressing, then arrange on lettuce leaves and top with chopped peanuts.
