Cinnamon Breakfast Cake

Ingredients:

2 Cups Flour whole wheat
4 Teaspoons Baking Powder plus
1/2 Teaspoon Salt
1/4 Cup Raisin
2 Tablespoons Sugar
1 Teaspoon Cinnamon (or more, to taste)
4 Tablespoons Brown Sugar (optional)
4 Tablespoons Shortening melted
1 Unit Egg well beaten
1/2 Cup Milk (evaporated is best)
1 Tablespoon Butter Melted or butter substitute

Directions:

1. Sift flour, measure, and sift with baking powder, and salt.

2. Add brown sugar; cut in shortening with 2 spatulas.

3. Add egg and sufficient milk to form a soft dough.

4. Add raisins. Spread in well-oiled and floured cake tin.

5. Pour melted butter over top of cake. Sprinkle with 2 tablespoons sugar and cinnamon.
