An old standby few kitchens can do without. Try chili or taco meat to make it kickier and a complete meal instead of a side, or just serve it with steak, chicken, and even fish because it is so filling.

Directions:
1. Heat oven to 450F.
Scrub potatoes clean, and remove eyes.
2. Space apart on
oven rack and bake for 1 hour.
Medium and small potatoes take 50 and 40
minutes respectively.

Cut potatoes open and butter and season to taste, or try one of the other
standard toppings: lowfat yogurt, cottage cheese, sour cream and chives.
