Cocoa Raisin Muffins

Can these be more delicious and low fat too!! Now you can feel good about serving a treat to the family!

Ingredients:

1/4 Cup Butter or margarine, melted (1 stick)
1/4 Cup Cocoa plus 2 Tbls
3/4 Cup Applesauce warmed
1 1/4 Cups Flour ;
1 Cup Sugar confectioner'
3/4 Teaspoon Baking Soda level - dissol ved in milk
1/2 Teaspoon Cinnamon (or more, to taste)
1/4 Teaspoon Nutmeg ground
1/4 Teaspoon Salt (I used reduced sodium)
1/2 Cup Raisin (up to 2)

Directions:

1. In bowl, blend butter and cocoa.

2. Add applesauce. Set aside. In large bowl, combine dry ingredients.

3. Add cocoa mixture and eggs. Blend just until moistened.

4. Fold in raisins/ Spoon into greased medium sized muffins cups.

5. Bake at 350 F for 20 minutes. Yield:12 muffins.
