A simple recipe for a quick turnout of a great Cucumber Salad.Cut cucumber,rinse out the excess water.Fry the cucumber,add onions and seasonings and your dish is ready to serve.
Ingredients:
1 Cucumber chopped
1 1/4 Teaspoons Salt (I used reduced sodium)
1 1/2 Tablespoons Sesame Oil
2 Tablespoons Green Onions
2 Tablespoons Light Soy Sauce ;
2 Teaspoons Chili Powder (I use Santa Cruz hot, but adjust this for taste) (up to 2)
1. Peel the cucumber and cut into wide strips, discarding seed core, then cut crosswise into sticks.
2. Place in a colander and sprinkle with the salt.
3. Set aside for 10 minutes to drain, then rinse and dry thoroughly.
4. Heat the sesame oil in a pan and fry the cucumber with the chopped green onion over medium heat until it begins to soften.
5. Add the soy sauce, chili powder and sugar and toss until the seasonings are evenly distributed.
6. Transfer to a serving dish and sprinkle with the sesame seeds.
