Ingredients:

6 Slices Dried Beef (carne seca)
3/4 Cup Sour Cream (I use fat free)
1/4 Cup Tomato Paste (6 ounce)
1 Can Cream Of Mushroom Soup (10 3/4 oz), undiluted
1/2 Pound Monterey Jack Cheese
6 Chicken Breasts boneless &

Directions:

1. Divide the cheese in half.

2. Shred one half and set aside. Cut the other half into 6 2-inch long sticks.

3. Lay out each piece of chicken (may pound to flatten slightly if desired) and cover with one slice of dried beef and a cheese stick.

4. Roll up chicken and place in casserole dish (2 quart), seam side down.

5. Mix soup, shredded cheese, sour cream and tomato paste.

6. Pour over chicken. Sprinkle parsley on top. May cover and refrigerate at this point.
