people likes corn bread with our chili, and this makes just enough for two people and also received the recipe from a quilting friend at church and have shared it with many others.


1 1/2 Cups All-Purpose Flour plus more
1 1/4 Cups Yellow Cornmeal
3/4 Cup Sugar confectioner'
1/2 Teaspoon Baking Powder plus
1/2 Teaspoon Baking Soda level - dissol ved in milk
1/2 Teaspoon Salt (I used reduced sodium)
2 Eggs large
1/2 Cup Vegetable Oil as needed
1/2 Cup Milk or part cream
1/2 Cup Buttermilk room temp
1 Cup Corn or Frozen, thawed

1. Preheat oven to 350F Grease 9-by-5-inch loaf pan.

2. Dust pan with cornmeal; shake out excess. Mix first 6 ingredients in large bowl.

3. Whisk eggs, oil, milk and buttermilk in medium bowl.

4. Add egg mixture and corn to dry ingredients and stir just until combined.

5. Pour batter into prepared pan. Bake 15 minutes.

6. Reduce temperature to 325F and continu baking until tester inserted into center comes out clean, about 1 hour.

7. Cool bread in pan on rack 30 minutes. Turn out bread onto rack.

8. Serve warm or at room temperature. (Can be prepared 1 day ahead.

9. Cover tightly and store at room temperature).
