Corn, Potato & Cheddar Chowder

For when the weather is bone chilling, ladle up a bowl of this rich, decadent, flavorful chowder. Perfectly accompanied with a hearty roll, this is sure to warm your soul from the inside out.

Ingredients:

1 Potato diced
2 cups Water salted
1/4 teaspoon Dried Sage
1/2 teaspoon Cumin Seed
2 tablespoons Butter
1 Onion finely chopped
2 tablespoons Flour
1 1/4 cups Heavy Whipping Cream
1 cup Corn
3 tablespoons Fresh Parsley
1/4 teaspoon Nutmeg
1 teaspoon Salt
1/4 teaspoon Pepper
1 1/2 cups Cheddar Cheese grated sharp
1/3 cup Dry White Wine
1 Bay Leaf

Directions:

1. Boil the potatoes in the water w/the bay leaf, sage & cumin seeds until just tender (15-20 min.).

2. Meanwhile, saute onion in butter until translucent. Add flour and incorporate.

3. Add cream, stirring with a whisk. Pour this sauce into the potatoes and their water, adding also the corn kernels.

4. Add chopped herbs & rest of seasonings & let soup simmer gently for about 10 min.

5. Stir in grated cheese & wine, mix well, and heat until cheese is completely melted.
