Crab Quiche

An easy-to-do recipe with a touch of fine cuisine. The exquisite combination of crab meat, white wine and vermouth turns out to be the exotic and attractive feature of this plate.

Ingredients:

Pie Crust Pastry 9 inch
1 lb Crab meat of
2 tablespoons Parsley Chopped
2 tablespoons Dry White Wine
2 tablespoons Dry Vermouth
Salt to taste
Pepper to taste
4 Eggs slightly beaten
1 1/2 cups Milk
Cayenne Pepper to taste
1 Egg white of
Paprika to taste

Directions:

1. Line bottom on pie pan, cover and refrigerate 1 hour.

2. Preheat oven to 450.

3. Mix crab with parsley, wine or vermouth, salt and pepper.

4. In separate bowl, combine eggs, milk and cayenne pepper.

5. Brush pastry with egg white, fill with crab mixture.

6. Pour egg mixture on top. Sprinkle with paprika and bake 10 minutes.

7. Reduce heat to 350; bake 40 minutes longer or until set.

8. Quiche is done when a knife inserted in the center comes out clean.
