Ingredients:

1 Kilogram Ripe Tomato cored and sliced
100 Grams Onions
125 Grams Carrots
1 Unit Bouquet Garni tied up in cheesecloth, consisitng of:
1 Liter Stock chicken **
1 Unit Salt pepper
300 Millilters Cream heavy
1 Unit Chive or basil

Directions:

1. Simmer the vegetables and bouquet with 3/4 of the stock until they are tender.

2. Remove the bouquet garnish and puree the soup in the blender or sieve until it is very smooth.

3. Taste, add seasoning and remaining stock. If it is to be served cold, stir in the cream and chill.

4. If it is to be served hot, bring the cream to the boil in a clean pan and add the soup gradually.

5. In both cases serve sprinkled with chives or better, chopped basil.

6. If you like a spicy flavor, add nutmeg to the soup as it cooks and sprinkle a little on top when it is served.

7. Modifications for sterilizing Do not season.

8. Blend the soup, then sieve. Pour into 11 sterilized jars, and seal and sterilize in the usual way.

9. When reheating, season then bring 200ml cream to the boil and pour in the boiling soup gradually.

10. You may have to re-blend to cure possible curdling.
