Cream of Sweet Potato Soup

Ingredients:

1 1/2 Cups Soy Milk (lite)
3 Sweet Potatoes mashed
2 Cups Vegetable Broth Fish Stock, or water
1 Pinch Ground Cloves (optional)
1 Pinch Nutmeg allspice, cinnamon,

Directions:

1. Peel and slice sweet potatoes.

2. Place potatoes in a Dutch oven with broth. Bring to a boil, cover and reduce heat.

3. Simmer until potatoes are tender, about 20 minutes.

4. Place half of potato slices and half of broth in a blender.

5. Add nutmeg, cloves, soy milk and salt, and puree.

6. Repeat with remaining potatoes and broth. Return to Dutch oven, stir to blend and reheat over low heat.
