Pre heat the oven to 180°C, Gas 4.
Heat the oil and add the bacon and cook for 10 minutes, then add the onions and garlic and cook for a further 5minutes.
Spread over the base of the flan.
Sprinkle over the coriander then top with the cheese.
Beat the eggs and egg yolks, with the hot milk, and season with salt and pepper.
Pour over the cheese but only half fill.
Place the flan on a baking tray then place in the oven, fill up the flan to the top now its placed in the oven. This way, you do not get any spillage.
Bake for 25-30 minutes, do not soufflé.
