Creole Eggs

Ingredients:

4 Tablespoons Butter (5oz)
4 Tablespoons Flour (00 type)
2 Cups Milk (or use about 1/2 C of powdered milk and about 1 C water)
1/2 Teaspoon Salt approximately
1/4 Teaspoon Pepper bell
4 Tablespoons Butter (5oz)
4 Tablespoons Onions
4 Tablespoons Pepper
1 Unit Clove Of Garlic mashed
2 1/2 Cups Canned Tomatoes chopped
1 Tablespoon Chili Powder
8 Unit Eggs chilled
1 Cup American Cheese
1 Cup Cracker

Directions:

1. NOTE: Drizzle melted butter over crumbs.

2. Cook white sauce until smooth--set aside. Prepare Tomato Sauce by melting 4 tablespoons butter and cook onion, pepper until soft; add tomatoes, garlic and chili powder.

3. Cook until thick, add a pinch of soda. Add white sauce to this sauce.

4. Place alternate layers of sauce and sliced cooked eggs in a greased casserole.

5. Top with cheese and crumbs. Bake at 350F 15-20 minutes.

6. Serve over rice or Chinese noodles. Serves 6.
