Ingredients:

1 1/2 Cups All-Purpose Flour (up to 2)
6 Tablespoons Sugar confectioner'
1/4 Teaspoon Salt approximately
5 Unit Eggs up to 8
1 1/2 Cups Milk (or use about 1/2 C of powdered milk and about 1 C water)
1 1/2 Teaspoons Oranges optional
3 Tablespoons Butter
1 Pint Cottage Cheese optional (2 to 3)
3 Tablespoons Sugar confectioner'
1 Teaspoon Cinnamon Ground

Directions:

1. Sift flour,sugar and salt;set aside.

2. Beat eggs until thick. Slowly,beat in milk,butter and grated orange peel,if desired.

3. Stir in flour mixture until smooth. Prepare filling:Stir together cottage cheese,sugar and cinnamon;set aside.

4. Cook crepes:Heat a well seasoned 10" cast iron skillet,add a small amount of oil or butter,if necessary so crepes do not stick.

5. Tip skillet to one side,pour 1/4 cup batter and quickly tip skillet to opposite direction so batter spreads over bottom of pan.

6. Cook 30 seconds to 1 minute or until golden brown and crepe peels easily off the bottom of the pan.

7. Remove from pan and cool. To serve;Fill each crepe with 2 tbsp.

8. of the filling, spreading evenly across one edge;roll up and serve immediately.
